Schezwan-y Coconut Eggplant & Potato

Made this Eggplant goodness for lunch today and boy it was so good, so we had to had to share this with you.



INGREDIENTS

  • Potatoes 3 (boiled)

  • Eggplant 2

  • Onions 1/2 Cup (chopped)

  • Shredded Coconut 1/2 Cup

  • Schezwan Masala 1 Tbsp

  • Brown Sugar 1/2 Tsp

  • Cumin Powder 1/2 Tsp

  • Coriander Powder 1/2 Tsp

  • Spring Onions a handful


PREPARATION

Step 1 In a pan, add Onions to a Tsp of Olive Oil. Cook until golden brown. To that mix, toss in your Eggplants. Let it cook and get mushy and soft.


Step 2

Add in the Cumin Powder, Coriander Powder and the boiled potatoes to the mix. Let it all cook.


Step 3

Now toss in the Shredded Coconut , Schezwan Masala and the Brown Sugar. Cook for some and garnish with Spring Onions!
