Quinoa Pancakes

I don't make pancakes alot, but when I do....I go all out. I make them for everyone at home and it turns into a whole thing.... Weekend Special Breakfast. Everybody at ours is all on board with eating healthy...so what do you do when you are craving pancakes but also don't want to quit feeling nice about eating good? You add your special health twist to it.....I did that by adding some Quinoa.

INGREDIENTS

  • BOHQuinoa 1 Cup

  • All-Purpose Flour 3/4 Cup

  • Almond Milk 1/3 Cup

  • Egg 1 Large Egg

  • Butter 2 Tbsp

  • Honey 2 Tbsp

  • Baking Powder 2 Tsp

  • Salt 1/2 Tsp

PREPARATION

Step 1 Whisk together the Flour, Baking Powder and Salt.


Step 2

In another bowl, whisk together the Egg, Almond Milk(or whatever milk you'd like to use) and Honey.


Step 3

Now slowly add in the Flour Mixture to the bowl of ingredients mixed in Step 2. Also add in the cooked Quinoa* to it. Stir the mixture well.


Step 4

Now in a pan, add in some Butter to melt. And then, slowly pour some on the pan. Cook until the top bubbles and the bottom turns golden brown. Then flip and cook until both sides turn nice golden brown. Step 5 Enjoy your healthy Quinoa filled pancake. I like to top mine up with BOHPumpkinSeeds, and heaps of Honey.

*Cook the Quinoa by boiling 1 Cup Quinoa with 2 Cups of Water till it's nice and fluffy. It usually takes about 15-20 minutes.
