Coconuts are definitely one of my favourite ingredients to experiment with these days. Whether it's in stews, veggies, or well.... eggs, I've been loving it's existence. A tiny bit of cheese & coconut and a whole lotta love is what this breakfast bowl of scrambled eggs is!
Desiccated Coconut 1/2 Cup
Parmesan Cheese 1/3 Cup
Tomatoes 1/2 (chopped)
Onions 1/2 (chopped)
Magic Masala 1 Tbsp
Ginger Garlic Paste 1/2 Tbsp
Brown Sugar 1/2 Tsp
Step 1 Heat some Olive oil in a pan. Add in Onions, cook till golden brown. Sprinkle some brown sugar to caramelise them a bit. Add in the Tomatoes once Onions seem a bit done.
Break the eggs in the mix to make scrambled eggs how you like them. Add in a bit some of the Parmesan Cheese. Add in all of the Desiccated Coconut. Sprinkle Magic Masala.
Sprinkle some Parmesan Cheese on top & Serve with Toasts or Malabar Parathas!
