Bag Of Herbs Vegetable Stew

Coconuts weren't a big part of my life, but little by little these brown things made way into my heart. Chewy and a taste that doesn't last long enough id think, but as my taste buds starting to appreciate things other than a bar of chocolate, I realise theres magic in what a coconut can do. How one thing can make so many wonderful kinds of things, it blows my mind. A jar of coconut chutney, a bottle of coconut milk, subtle crunch when added to veggies and creaminess when mixed in curries. So I got myself a coconut today, got it broken in the vegetable shop. The shopkeeper told us to drink its water, which was such a surprise to me. Used some of the shaved coconut to make a bowl of chutney, made milk with the rest to make a good bowl of stew. Because, stew and malabar parothhas are nothing but pure love!

INGREDIENTS

  • Onions 3 Onions

  • Potatoes 3 Potatoes

  • Coconut Milk 1 Cup

  • Peas a handful

  • Curry Leaves a handful

  • Cumin Powder 1 Tbsp

  • Coriander Powder 1 Tbsp

  • Magic Masala 1 Tbsp

  • Garlic Powder 1 Tbsp

  • Cinnamon 1/2 Tbsp

PREPARATION

Step 1 Add in some Olive Oil to a pan. To that, add Cinnamon, Garlic Powder, Coriander Powder, Curry Leaves, Cumin Powder. Add chopped and boiled Potatoes.

Step 2

Let the potatoes cook till they're golden brown. To that add in chopped Onions and boiled Peas. Once both cook a bit, add in Coconut Milk and Magic Masala.


Step 3 Bring to a boil. Enjoy with Malabar Parathas!
